A crispy and tantalizing treat
When Russian nationals and members of the Flying Tigers dined at Café Astoria, they would invariably order a dessert of vanilla cookies, almond crisps, and Taiwanese pastries. The café is also well-known for its lady fingers cookies. Italian’s savoiardi or French’s à la cuillère are other names for this treat. Similar to macarons, lady finger cookies are challenging to make, requiring separation of egg whites and yolks to achieve its airy lightness and pearl-like appearance. The crispy cookies are mildly sweetened with a rich and creamy filling sandwiched in the middle. They are one of Café Astoria’s top selling desserts and also the most popular souvenir gift among foreign visitors.
